Katami and Milton’s & Lee’s Presents Feast of the Seven Fishes Dinner Benefiting Southern Smoke Foundation on Monday, December 15, 2025
Two of Houston’s most celebrated culinary minds reunite this December for an unforgettable evening benefiting Southern Smoke Foundation.

On Monday, December 15 at 7 p.m., Katami Executive Chef Manabu “Hori” Horiuchi and Local Foods Group Culinary and Creative Director Seth Siegel-Gardner and their teams will come together for a one-night-only Feast of the Seven Fishes dinner, hosted in Katami’s sunroom.
Since Horiuchi and Siegel-Gardner’s original collaborative efforts in the early 2010s, each has earned critical acclaim for their distinctive approaches to cooking and storytelling through food.

“To have the talent behind Katami and Milton’s & Lee’s come together to support our friends at Southern Smoke Foundation is something really special, and a true reflection of Hori’s and my evolution since the early 2010s,” says Seth Siegel-Gardner, culinary and creative director of Local Foods Group. “One thing that hasn’t changed since then is Hori-san’s dedication to his craft and his humility; it’s always an honor to cook with him.
The menu will reflect the sensibilities of the chefs and the concepts they represent—authentic, refined Japanese cuisine with unparalleled ingredient sourcing on the Katami side and modern, playful, Italian-inspired creations on the Milton’s & Lee’s side.

Eight collaborative seafood-centric courses, two of which will be a part of the opening cocktail hour, will be the backbone of the intimate seated dinner to be prepared by the Katami and Milton’s culinary teams, led by Chef Hori and Executive Chef Kent Domas, respectively. Expect octopus terrine, nigiri, seafood stuffed ravioli, scallop, eel, and a host of surprises.

Award-winning Local Foods Group Wine Director Mark Sayre will contribute wine pairings, while will pour Italian-inspired cocktails. Peter Lim, pastry chef at Katami, will end the experience on a sweet note.

“Seth has always brought cool techniques and fun to the table,” says Chef Hori of Katami. “He has passed that on to his teams at Milton’s & Lee’s, and we are very excited to have a piece of that at Katami, for one night only,” he adds.
